Ingredients

1½ lbs sirloin flap steak

3 tbsp olive oil

3 cloves garlic, minced

1 tsp kosher salt

½ tsp black pepper
-
1 tsp smoked paprika
-
1 tsp chili powder
-
Juice of 1 lime
-
4 tbsp butter
-
2 cloves garlic, minced
-
1 tbsp fresh parsley, chopped

Warm tortillas or crusty bread

Grilled veggies or a simple salad
Directions
In a bowl or zip-top bag, combine olive oil, garlic, salt, pepper, smoked paprika, chili powder, and lime juice. Add sirloin flap steak and let marinate at least 30 minutes, up to 4 hours.
Preheat grill to medium-high heat (around 400–450°F).
Grill steak 4–6 minutes per side for medium-rare to medium, depending on thickness. Remove from grill and let rest 5 minutes.
While steak rests, melt butter in a small pan over low heat. Add garlic and parsley, cook 1–2 minutes until fragrant.
Slice steak against the grain and drizzle with garlic butter. Serve with tortillas, bread, or sides of choice

- Slice against the grain to maximize tenderness
- Don’t overcook — flap steak is best medium-rare to medium
