These fajita beef quesadillas are crispy on the outside, loaded with tender beef strips and melty cheese, and easy to slice and share. They’re quick to make and always a crowd favorite.
Ingredients

1 lb fajita strip beef

1 tbsp olive oil
-
1 tsp kosher salt
-
½ tsp black pepper
-
1 tsp chili powder
-
½ tsp cumin
-
½ tsp garlic powder
-
1 bell pepper, thinly sliced
-
1 small onion, thinly sliced

4 large flour tortillas
-
2 cups shredded cheese (Monterey jack, cheddar, or Mexican blend)

Butter or oil for the pan

Optional: Sour cream, guacamole, salsa
Directions
Heat olive oil in a large skillet over medium-high heat. Add fajita beef strips and season with salt, pepper, chili powder, cumin, and garlic powder. Cook 3–4 minutes until beef is just cooked through. Remove from skillet and set aside.
In the same skillet, add peppers and onions. Cook 4–5 minutes until softened and lightly caramelized. Return beef to skillet and toss with veggies. Remove from heat.
Heat a clean skillet over medium heat and lightly butter or oil the pan. Place one tortilla in the skillet. Sprinkle cheese evenly over half the tortilla. Top with beef and veggie mixture, then more cheese.
Cook 2–3 minutes per side until tortilla is golden and cheese is melted. Repeat with remaining tortillas.
Let quesadillas rest 1 minute, then slice into wedges. Serve warm with sour cream, guacamole, or salsa
Recipe Note
- Slice beef against the grain for tenderness
- Don’t overload fillings—this keeps them crispy
- Keep finished quesadillas warm in a low oven (200°F)
- Add jalapeños for heat if desired
