This unique system enables cows to convert Omega-6 fatty acids, specifically linoleic acid, into conjugated linoleic acid (CLA). CLA acts as an antioxidant and is classified as a natural trans fat. While trans fats from vegetables are harmful and widely criticized, CLA doesn't get the attention it deserves for its potential health benefits.

Beef, in general, isn't a rich source of Omega-3 and Omega-6 fatty acids. However, the type of feed cattle consume can significantly influence the balance of these fats in the meat.

What exactly are Omega-6 and Omega-3?

First things first, while fats often get a bad rap, the right ones are incredibly important to a healthy diet. To put it simply, food fats fall into two categories: saturated or unsaturated fats. It gets a bit more complex with unsaturated fats, which can be either polyunsaturated or monounsaturated fats.

Omega-6 and Omega-3 are both forms of polyunsaturated fats and essential fatty acids (EFAs) that our bodies cannot produce from consuming other types of fats, so you can only get them by eating foods that contain them. That's where Florida Premium Beef comes in.

The problem is, too much Omega-6 can be a bad thing. Modern diets, especially those loaded with processed foods, often have way too much Omega-6 and not enough Omega-3. Grain-fed beef has more Omega-6 because cows eat a lot of soy and corn, making this imbalance even worse.

Ratios of The Past & Present

Here's a fun fact for you: Anthropologists have found that back in the Prehistoric days (Paleolithic Age), cavemen had a diet with an Omega-6 to Omega-3 ratio of 1:1. It's no surprise they had fewer diseases and were probably healthier than we are now.

Fast forward to the 20th century: The U.S. started processing foods heavily and using cheap vegetable oils to cut costs. Now, the average Western diet has a very high ratio of 20:1; and this shift has ultimately led to a lot more health issues for Americans today.

Studies show that a healthy diet should have an Omega-6 to Omega-3 ratio of no more than 4:1. But the ideal ratio is still 1:1.

Ratios in Store-Bought Beef

Most store-bought beef is grain-fed with a common Omega-6 to Omega-3 ratio of between 15:1 and 20:1. Whoa!! That's not good!

So, when it comes to grass-fed beef, which is typically from smaller or more niche farms (like us), we see a common ratio closer to 3:1, which is well within the 4:1 guidelines of a standard healthy diet.

The Problem with Grain-Fed Beef

Feeding cows heavy grains, like soy and corn, is not their natural diet. These grains, often found in conventional cattle feed, can negatively impact the cows' metabolism and health. Research by Bruce Watkins, a professor at Purdue University, and Loren Cordain, a professor at Colorado State University and author of "The Paleo Diet," has shown that the ratio of Omega-6 to Omega-3 fatty acids in grass-fed beef is much more favorable. They both found that grass-fed steers and wild ruminants have a ratio of around 2:1, while grain-fed steers can have ratios as high as 13:1. This lower ratio in grass-fed beef aligns with the American Heart Association's recommendations to increase Omega-3 intake to reduce the risk of cardiovascular disease.
